Our Story
It all began in 1951 when Joseph M. Parillo Sr. founded Parillo’s Sausage Co. in the heart of Saratoga Springs, New York. With a deep-rooted passion for quality and a commitment to time-honored recipes brought over from Italy, Joseph built a business that would become a staple of the local community.
His son, Marc Parillo, grew up in the business — literally. Starting at just 10 years old, Marc spent his childhood learning the craft from his father, absorbing every recipe, technique, and tradition that made Parillo’s Sausage so special.
When Joseph passed away in 1985, Marc took over the reins and dedicated his life to growing the brand into one of the most respected and admired sausage names in all of Upstate New York.
Under Marc’s leadership, Parillo’s Sausage became a household name — supplying Hannaford Supermarkets, local restaurants, diners, farm stands, and pizza parlors throughout Saratoga, Washington, Fulton and Warren counties.
He refined the recipes over the decades, staying true to the family’s Italian roots while adapting to the tastes of a new generation.
Sadly, Marc passed away unexpectedly in February 2024 after battling Glioblastoma. His loss was deeply felt — not just by his family, but by an entire community that had grown up on Parillo’s flavors.
Carrying the Legacy Forward
Today, Parillo’s Sausage is proudly owned by Marisa Parillo Rahman, Marc’s daughter and the third generation of the Parillo family to carry this beloved brand forward.
Like her father before her, Marisa has been part of this business since she was 10 years old — and when Marc suffered heart attacks in earlier years, she stepped in and ran the business entirely on her own.
After her father’s passing, Marisa made a bold decision: to reopen Parillo’s Sausage and take it further than ever before.
She began by selling the family’s proprietary seasoning blends online — something her father had never done — and the response was overwhelming.
In November 2024, Parillo’s Sausage officially reopened, and Marisa is focused on expanding the brand, bringing Parillo’s flavors to a wider audience across the country.
By her side is her daughter Alexa, who handles the legal and bookkeeping side of the business while also helping make the sausage. Together, this mother-daughter duo is writing the next exciting chapter of a 70+ year legacy.
